Gabriele Franco’s culinary journey began in Sicily in 2009, where he completed his apprenticeship immersed in the traditions, flavours, and discipline of Southern Italian cuisine. From there, he expanded his experience internationally, refining his skills aboard MSC cruise ships and working in restaurants across Europe. These formative years shaped his deep respect for authentic techniques while exposing him to diverse culinary influences.
On 2 February 2017, Gabriele arrived in Australia, bringing with him a passion for Sicilian produce and a commitment to genuine Italian hospitality. He soon established a long-term collaboration with Navarra Venues, a well-known Sicilian family-run business, where he further strengthened his reputation within Sydney’s vibrant food scene.
Gabriele is the Founder and Managing Director of La Botte D’Oro in Leichhardt, a venue celebrated for its honest, soulful approach to Italian dining. Alongside this, he has launched innovative projects including Table & Together and ProBaker, reflecting his dedication to craftsmanship, community, and the evolution of food culture beyond the restaurant setting.
At the heart of Gabriele’s work is a focus on authentic Southern Italian cuisine, particularly Sicilian, using traditional techniques thoughtfully modernised for contemporary Sydney diners. His cooking is guided by simplicity, quality ingredients, and a deep respect for heritage, delivering food that feels both timeless and relevant.
In recognition of his contribution to the local hospitality industry, Gabriele was selected as a finalist in the Inner West Small Business Awards (2025). He was also recognised by the Italian Chamber of Commerce as a finalist for Italian heritage, alongside prominent names such as Technogym and the Marconi Club, an honour that reflects his role in proudly representing Italian culture through food.
